  • 1 1/2 tsp sea salt
  • 3/4 tsp baking soda
  • 1 1/2 cups plant-based milk
  • 3/4 cup neutral oil (e.g., canola, avocado, rapeseed)
  • 1/4 cup white vinegar (or apple cider vinegar)
  • 1 tbsp vanilla extract
  • 75 g dark vegan chocolate (for frosting)
  • 1 cup vegan butter (baking stick, not tub style), room temperature
  • 1/2 cup unsweetened Dutch-process cocoa powder
  • 5 cups confectioners' sugar, sifted
  • 24 tbsp plant-based milk
  • 1 tsp vanilla extract (for frosting)
  • 1/4 cup canned coconut milk (for ganache)
  • 80 g good quality dark vegan chocolate (for ganache)
  • 1/21 kg dark vegan chocolate (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking pans.
  2. Melt the dark vegan chocolate in hot coffee and set aside.
  3. In a bowl, whisk together flour, sugar, cocoa powder, baking powder, salt, and baking soda.
  4. Mix wet ingredients: plant-based milk, oil, vinegar, vanilla extract, and melted chocolate mixture.
  5. Combine wet and dry ingredients until just mixed; be careful not to overmix.
  6. Divide batter into prepared pans and bake for about 30 minutes.
  7. Cool cakes completely before frosting with a mix of vegan butter and cocoa powder.
  8. Prepare ganache with coconut milk and dark chocolate; drizzle over the frosted cake.
  9. Optionally mold skulls from melted chocolate for decoration.
