  • 1 large onion (diced)
  • 3 large carrots (cut into ½ inch chunky pieces)
  • 2 ribs celery (diced)
  • 5 cloves garlic (minced)
  • 1 medium rutabaga (cut into chunky pieces)
  • 4 large potatoes (cut into large chunks)
  • ¼ head green cabbage (shredded)
  • 9 oz vegan beef or mushrooms
  • 4 cups vegetable stock
  • Soy sauce, salt, pepper, bay leaves, thyme, rosemary

Instructions

  1. In a large pot, heat the oil over high heat and sear the vegan beef or mushrooms until golden brown; remove and set aside.
  2. Lower the heat and add onions, carrots, and celery; sauté until they start to color. Add garlic just before finishing.
  3. Stir in flour to coat the mixture; gradually add vegetable stock while stirring to avoid lumps.
  4. Mix in rutabaga, potatoes, cabbage, soy sauce, and seasonings until well combined.
  5. Bring to a gentle boil, then reduce heat to medium-low and let simmer uncovered for 45-50 minutes until potatoes are soft.
  6. Return seared vegan beef/mushrooms to the pot for the last ten minutes before serving.
